This Spicy Marmite Salmon is a treat for the Marmite aficionado. It can be easily tailored to your liking by using your favorite sweet chili sauce.
I mentioned in this Marmite Beef Stew post that I have been experimenting and cooking with Marmite recently. Yesterday, I made something really quick and easy Spicy Marmite Salmon for dinner and I am happy to say that it was quite good. I did not tell the guys what was in the marinade as it looked like this Plum Sauce Salmon but they could tell there was Marmite in it when they tasted it. The flavor was definitely discernible and totally unmistakable.
Sweet Chili Sauce
This time, I mixed the Marmite with sweet chili sauce. Depending on the kind of sweet chili sauce you use, the taste may vary slightly. As such, you can tailor it to your personal preference by using your favorite sweet chili sauce. There are many different brands out there that you can choose from. If you prefer it to be even sweeter, you can add a teaspoon of honey.
I simply use what I had on hand which was Yeo’s Sweet Chili Sauce. This is not too sweet and is only mildly spicy. A sweeter and spicier option is to use Lingham’s Hot Sauce.
Diluting the Marmite
Marmite is rather thick and getting it to combine with the sweet chili sauce is not easy. I diluted it with 2 teaspoon of hot water and that worked out really well. I was then able to mix it with the sweet chili sauce to form a thick marinade. Even so, during cooking the sauce flowed to the sides of the tray and scooping it back up onto the salmon half way through cooking ensured that most of the marinade stayed on the fish.
Using a Toaster Oven To Make This Spicy Marmite Salmon
Fish cooks easily and quickly, usually no more than 15 minutes. As such, I prefer to use my handy toaster oven that sits on my counter. The time given in the recipe is just an approximate time. Depending on the oven you are using, it may take a slightly shorter or longer period of time. The fish is ready when you are able to flake it with a fork. Preferably the sauce should also be slightly brown and caramelized.
