Happy New Year! I hope you had a wonderful holiday and are energized for an exciting year ahead. If you had been like me and was indulging a little in celebratory food, it is now time to work off those extra calories. It is important to have a regular routine of lean eating and exercise. My goal this year is to work out at least 30 minutes a day, 5 times a week. I am also planning to incorporate more great tasting smoothies into my daily intake. I like smoothies because they satisfy and keep me going for hours. They are a cinch to prepare and nutrients can easily be packed into that one single glass of goodness.
For the first recipe of the year, I am excited to share with you this creamy Peanut Carrot Smoothie incorporating Jif Peanut Powder. This peanut powder is made from just one ingredient – fresh roasted peanuts. There is no added sugar or salt. It has the same amount of protein as traditional peanut butter but with 85% less fat. Just 3 tablespoons will provide 8 grams of protein.
While it is important to add good fats into your diet, it is easy to overdo it with something as delicious as peanut butter. With Jif Peanut Powder, I can now enjoy peanut butter and the flavor of peanuts with less calories and fat.
This creamy Peanut Carrot Smoothie makes a quick and satisfying breakfast. It takes just a few minutes to prepare and uses only 4 ingredients – carrots, banana, Jif Peanut Powder, and Silk Unsweetened Almond Milk. The ripe banana provided the sweetness. No additional sugar is necessary unless desired.
Simply blend all the ingredients together until the mixture is smooth and frothy. Pour into glasses and enjoy!
If you love chocolate and prefer something just a little sweeter, you can use Jif Chocolate Peanut Powder instead. It contains semisweet chocolate and a dash of sugar. Both versions may be reconstituted into a low calorie, low fat smooth peanut butter by mixing it with water to desired consistency.

Peanut Carrot Smoothie
Ingredients
- 2 medium carrots (cut into small pieces)
- 1 banana (peeled and cut into small pieces)
- 3 tbsp Jif peanut powder
- 1 cup Silk unsweetened almond milk (240ml)
Instructions
- Combine carrots, banana, Jif peanut powder, and unsweetened almond milk in a blender. Blend until smooth. Pour into glasses and sprinkle some Jif peanut powder on the top if desired.
- Serve immediately.
